Gypsy!Fic?  
Two things:

1) I was reading a fic where Castiel (I think) was a Romani. Dean was getting all defensive because he though Cas was following him. Any Ideas?

2) and Au where Cas/Dean/Sam or any combination of, are/is a Romani?

FYI, most people of Romani/Roma descent consider the term 'gypsy' to be offensive. It's an insult, you really shouldn't use it.

Actually gypsy is considered fine in most places. Conflating Roma and Romani is however not correct. The Roma are a specific group within the Romani community, and the two words are not interchangeable. All Roma are Romani, but not all Romani are Roma.
